ODF files (always?) include a thumbnail image that can be extracted. In 
an ODF 1.0 file that I've got it's in "Thumbnails/thumbnail.png" when 
unzipping the file.

For Gnome/Nautilus, there are several bits of software responsible for 
thumbnails such as gnome-video-thumbnailer and gnome-theme-thumbnailer, 
and it'll save them in %HOME%/.thumbnails

I think these executables are called by libgnomeui/gnome-thumbnail.c -- 
see http://ftp.acc.umu.se/pub/GNOME/sources/libgnomeui/2.18/

On my desktop, the latest Ubuntu, I don't see odt thumbnails. Natch.
