A strangly relevant blog from Rob Weir just came to my attention and it goes
into how MOOX uses bitfields in the fileformat.

This reads to me that the xml really is just the binary format but with in an
XML fileformat.
The question if MS converts to a binary format on loading, or not is not that
relevant (although it would explain a thing or two) really, as the simple
convertion from moox-to-odf has problems exactly because of such definitions
in the format.
As Marbux indeed wrote a couple of mails back.
